When we are in the crazy hustle and bustle of busy weeknights (or weekends running Salt & Acres) there are a few recipes that are my go to and this is one of them! I make this in a couple different variations as both a Vegetable Ragu and a Bolognese (meat sauce).
I love a good quick sauce- its the perfect balance of protein, veggies and carbs! And it makes me feel just a little bit more put together (even when I am not!) and it pairs beautifully with a glass of wine!
<- This shopping list looks to be a little long but you likely have most of these items in your house! The great thing is everything can be improvised and I always have a backup jar of sauce! I love RAOS and Cabrone!
Let’s make dinner!
- Start your sauce. In a sauce pan turned to medium heat- drizzle a couple tablespoons of olive oil and once it has warmed up add your fresh garlic. Sauté the garlic till you can smell the aroma but be careful not to let it burn!
- Add your canned tomato sauce, sprinkle with dried basil (2-3 Tablespoons), sprinkle of salt and sugar, and a sprinkle of red pepper.
- Cook pasta to the “al dente” instructions.
- Toss in sauce and serve!
Do you want to sub ground beef for vegetables?
Keep with the same recipe, dice up the mushrooms, onion, carrots and bell peppers very small. Sauté with olive oil and garlic- then add your tomato sauce OR jar sauce.
-Salad-
This salad is so simple and can easily be adjusted with what you have on hand. Simply Chop up onions, cucumber, tomato- toss together with a drizzle of olive oil, vinegar, salt & pepper. This salad will last nicely in the fridge for a couple of days!
